Maine Muffins

I included a half-dozen recipes for muffins in my upcoming book, House of Diamonds Cookbook: Hearty Meals for the Active Family. Made with whole-grain flour, adding fruit, nuts, coconut, grated carrots-- you name it-- muffins are a healthy go-to food. Forget commercial fast food and go with homemade muffins!


Maine Muffins
Homemade muffins are so much healthier and lower in calories than store-bought muffins. With fruit, nuts and even vegetables, these are chock full of added protein and nutrition. You’ll want to make extra for quick breakfasts and snacks.

Ingredients:
2 cups flour
1 cup sugar
2 teaspoons baking soda
1 ½ teaspoons cinnamon
½ teaspoon salt
3 eggs
½ cup vegetable oil
½ cup milk
1 ½ teaspoon vanilla
2 cups chopped, peeled apples
2 cups grated carrots
½ cup coconut
½ cup raisins
½ cup sliced almonds

Directions:
Preheat oven to 375 degrees. In large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs, then add oil, milk and vanilla. Mix well. Stir into dry ingredients just until moistened. Fold in remaining ingredients.
Fill greased or lined muffin tins ¾ full. Bake at 375 degrees for 20- 25 minutes, until done. They will be lightly browned and a knife or toothpick inserted in center will come out clean. Delicious with butter and honey.
